A "toastie" is an easter egg hidden within the program In the Groove was based off of, Stepmania. It's a joke referring to the old Mortal Kombat games, where connecting with a counter attack would make a picture of one of the programmers pop up in the corner, and shout "Whoopsie!" Thanks to the low quality sound of SNES/Genesis vox, it could easily be mis-heard as "Toasty!"

In ITG and Stepmania, a "Toasty" is 250 consecutive Excellent or Fantastic steps. In Stepmania, a character would pop up much like in the Mortal Kombat games...talk about distracting. Good thing they took it out for ITG.
